What are paranthas? One of my most favorite foods in the world, they are chapattis stuffed with a spicy vegetable-ginger-garlic combo and fried in ghee or oil. Serve them with yogurt and a little achar (spicy Indian pickle) and you are at heaven’s door.
In this video I show you how to make two kinds, Aloo (potato) and Gobi (cauliflower)… Everything from making the dough, the stuffings, how to roll out and stuff the paranthas, and how to cook, along with troubleshooting recommends and other handy tips for success!
This was so much fun to make, a lot of work, and took the efforts of some very exceptional friends and supporters…. Including my music video producer-director daughter Avtar Khalsa, who pulled the whole thing together and brought in her buddy, cameraman extraordinaire Aaron Gambel. She took care of rentals, close-up camera, location, and all of the post editing… Making her mama proud! Aaron was such a pro in every way imaginable and truly a pleasure to work with, literally giving me a day of his life. My long time little sister, Sat Hari Khalsa, gave us use of her spacious sunny home and kitchen for the shoot without even a moment’s hesitation. We were sure to leave her fridge stocked with plenty of yummy paranthas for her to enjoy. Alan Jensen helped with color correction, and my daughter Sat Amrit Khaksa put her creative talents to work designing the graphics and titles/text. Whew! What an amazing crew!
I had never done anything like this before and learned so much… I can hardly wait to get started on the next one.
